

National Margarita Day is observed annually on February 22nd.
Known to be the most common tequila-based cocktail served in the United States, the margarita is a cocktail that consists of tequila, triple sec and lime or lemon juice. A key ingredient is the freshly squeezed lime juice. Last year it was calculated that 185,000 margaritas were consumed every hour and mostly with a side dish of chips and salsa.
Let’s make life a little more interesting and have our margaritas with a delicious side of shrimp ceviche. Ceviche can be made in many ways, but my favorite is the simplistic and delicious version using shrimp “cooked” with the tangy citrus acidity of lime juice and kick of jalepeno peppers.
